Weinbau Sauer Roman is a renowned winery that switched to organic production in 2020. The decision in favor of organic farming was made in order to cultivate healthy soil that allows high-quality grapes to thrive and preserves the biodiversity of insects. Thanks to the Pannonian climate and the sunny loess hills, fruity, often exotic-looking wines of excellent quality are produced. Ebenthal in the Weinviertel is dominated by loess, loam and black earth soils, an exquisite soil mixture that is a decisive factor for the characteristic full-bodied, floral, spicy wines.
