Description
The sparkling wine cellar has been managed by Christian Madl since 2003, who incorporates his accumulated knowledge and experience into the production of MADL sparkling wines. Numerous national and international awards underline the quality and commitment that goes into the production. The grapes for the MADL sparkling wines are carefully harvested by hand into small crates. After gentle pressing, only the first part of the must is used. The resulting base wine is mixed with sugar and yeast in the spring and filled into sparkling wine bottles, where it ferments a second time and becomes sparkling wine. The MADL sparkling wines mature "on the lees" for between 15 and 60 months to become fine-sparkling and creamy. Each bottle is then shaken by hand on racks and the yeast sediment is removed by artful disgorging. Dosage liqueur is added to determine whether the wine will be brut or ultra brut. Once corked and wired, nothing stands in the way of enjoying the MADL sparkling wine.
